A traditional medium-sized Sardinian pastina, made in a similar fashion to couscous, where the flour dough is rubbed into small pearls before being toasted in wood-burning ovens. Traditionally used in soups and stews, and prized for retaining its nutty flavor and tender chew even after long cook times. Also delicious cooked and chilled for composed salads.
