This unique cheese has been granted a Denomination of Protected Origin Certification to guarantee its traditional qualities. It is made with pasteurized cow's milk that is aged and hand-washed weekly over a ripening period of 50 days. The end result has a strong aroma but mild, creamy taste with a unique fruity tang and buttery soft texture beneath an inedible straw-colored crust. Taleggio is an excellent dessert cheese, pairing well with a glass of structured, fruity Merlot or a malty Belgian beer.
