A tubular cut similar to rigatoni but half the length, with ridges for exceptional sauce adhesion, mezze maniche, which means "half sleeves" in Italian, is excellent with chunky vegetable-based sauces. Made with three heritage grain varieties grown in Tuscany on the Frescobaldi family estate, Tirrena pastas are bronze-drawn and slowly dried for up to 6 days to achieve their rough, porous surface. The result is pasta that highlights and holds sauces exceptionally well while preserving the nutty flavor and aroma of premium durum wheat.
