Manchego is a DOP cheese; it can be made only from the milk of the Manchega sheep that graze in the provinces of Albacete, Ciudad Real, Cuenca, and Toledo, all of which form the region of Castilla La Mancha. We have proudly sourced this Manchego for over 20 years from Quesos Corcuera, and their company spans three generations of the Corcuera family. They are based in the countryside of Toledo and are dedicated to making the best cheese possible, always producing from same day milk. Like all of their cheeses, from young to reserve, the standout characteristic of this cheese is the wonderful, well-rounded flavor of the sheep’s milk.
